All the livestock produced at Cannon Farm, apart from a few direct sales of Highland Beef, are sold through Graig Producers, a collective group of Organic livestock farmers.

Nigel Elgar of Cannon Farm is one of the founder members of Graig Producers along with Bob and Carolyn Kennard, formally of Graig Farm Organics. In the mid 1990's Bob, Carolyn and Nigel set up Graig Producers in order to protect the interests of organic farmers in Wales and the Borders, and latterly around the UK.

With over 700 mostly family-run farms, we now have a collective force of suppliers that can facilitate continuity of supply and fulfillment of high volumes demanded by today's retailers. We have two clear aims:

  • To make organic farming financially sustainable.
  • To create stability and continuity in the organic meat market for the benefit of everyone in the food chain.

Highland Beef
Because of the size and slow maturing nature of the Highland Cattle we finish the male calves at about 40-45 months old and take them to a small local abattoir and butchers where they are prepared for customers as 10kg beef boxes. The standard supermarket specification is for animals under 30 months of age with large carcass weights which the Highlanders under their natural conditions cannot meet.
